Vegetable kurma recipe | vegetable korma recipe | vegetable kuruma recipe is a  famous subtle tasty south Indian coconut based curry. It is a is a popular Indian curry in which boiled vegetables are cooked in a creamy aromatic gravy of coconut and Indian spices based paste and sautéed onion and tomato while in North India yogurt or cream is added to make the gravy. It’s best to have with Rice,Chappathi, Parotta or even Dosai. You can use any vegetables of your wish to make this Kurma, here we have used Drumstick, green beans, potato, carrot, green peas, double beans.

Ingredient:


Drumstick 50gms

Green Beans 50gms

Carrot 50gms

Potato 50gms

Double beans 50gms

Green Peas 50gms

Brinjal 50gm

Onions 3 nos

Tomato 2 nos

Ginger & Garlic paste 2 tbsp

Green Chilli 2 or 3 sliced

Vegetable oil

Mustard 1 tsp

Urad dhal 1 tsp

Curry leave

Fennel seeds 1tsp

Coconut 100gm

Poppy seeds half tsp

Cinnamon stick 1 pc

Cloves 1 pc

Bay leaf 1 pc

Turmeric powder half tsp

chili & coriander powder per taste

Salt per taste

  
Method: 


1)    Grind the Ginger & Garlic into paste with little water and set aside. Chop all the vegetables and rinse well
2)    Grind Coconut, Fennel seed & Poppy seeds into paste with little water and set aside

  











3)    Heat the oil in the pot, add mustard seeds and urad dhal let it splutter
 










4)    Then add Cinnamon stick, cloves, bay leaf
5)    Add Chopped onion and green chili. Sauté until onions turn pink. The raw smell of the onions must go away


 


6)    Add ginger & garlic paste now Sauté until the raw smell goes off
7)    Add tomato and sauté well till its mixed well with other ingredients











8)    Add Carrot, beans, drumstick and sauté well for 5 mins
9)    Add Double beans, green peas and sauté for another 5 mins



 


10)    Add water just enough to cover the veggies, add salt, chili & coriander powder, turmeric powder stir well




11)    Once the mixture starts boil add chopped potatoes
12)    Just 5 mins before the potato get cooked add brinjal as it will be cooked quickly



 

13)    Finally add coconut paste we made, stir well and after 2 to 5 mins switch of the stove

 

14)    Your Veg Kuruma is ready taste it with rice,chappathi or parotta
