Vendakai fry / Okra fry / Bindhi fry / Ladies finger fry is a simple stir fry prepared with lady’s finger, Onions and basic Indian spices
If you are lucky to find this versatile vegetable fresh, make sure to select the smallest and firmest pods. If okra pod gets too long, it often becomes woody and too hard to eat.
Many people don’t like okra because of its slimy nature. But it can be reduced if okra is cooked in minimum moisture.
Okra has many nutritional benefits, its high in Vitamin C, low in calories, high in vitamin K and folate. It is excellent sautéed or fried.
This Vendakai fry/Okra fry recipe is simple and quick to make as it’s a one pot recipe. We prefer it with Sambhar rice or Milagu rasam.

Now over to recipe:
Ingredients:
Oil
Onions 2 big ones
Curry leaves 5 to 10 nos
Ladies finger 350gms
Homemade chili powder
Turmeric powder 1 pinch
Corn flour 4 small tsp
Salt as per taste
Corriander leaves for garnishing
Methods:
Wash okra and dry it with paper towels. Trim the rough tops
and skinny bottom tips off the okra pods, and cut the okra into small pieces.
Heat oil in a pan. Add mustard seeds and when they start
sizzle
Add Onions Curry leave and stir fry until the onions turn
golden brown in color
Bring Okra/Vendakai into the pan mix well and cover it, let
it cook for 10 to 20 mins in low flame. Now and then open and stir well to
avoid bottom getting burnt.
Then add Homemade chili powder (Grinded mixture of Coriander
seed & Dry red chill with a bit of turmeric), Salt per taste, a pinch of
turmeric powder and corn flour for crispiness
Cook uncovered till it changes color and is slightly
crispy
Keep stirring it now and then for even cooking. Garnish with Corrainder leaves,This curry
can be served as a side dish for rasam and sambar rice.
