Vegetable fried rice - Restaurant style | Easy Cooking for 7 people

Veg Fried Rice / Vegetable Fried Rice is a very tasty recipe from the Indo Chinese cuisine. This is an easy and delicious recipe to include vegetables in your diet. Vegetable fried rice from Chinese Style has been modified to Indian Style hence you will taste fluffy basmati rice cooked with spices along with crisp vegetables.

Veg Fried rice is a popular street food in Asia. In some Asian countries, there are small restaurants, street vendors and traveling hawkers that specialize in serving fried rice. In India it is common to find traveling fried rice street hawkers with their cart stationed in busy streets or frequenting residential areas in the city. Many food stands found on the streets across Southeast Asia serve fried rice with a selection of garnishes and side dishes that the customer can choose to add.

In this recipe let see how to cook for a family of 7 people in a easiest and tastiest way


Ingredients:


Basmati rice 500gms

Vegetable oil

Bay leaf 1no

Cinnamon 1 no

Cloves 3 nos

Cardamom 1 nos

Onions 3nos

Green chili 6nos (You can add more if u like to spice it up)

Ginger & Garlic hand semi grinded 2tbsp

Carrots 50gm

Capsicum 50gm

Cabbage 50gm

Long beans 50gm

Green peas 50gm

Ghee 2tbsp

Cashew nuts 25gm

Salt per taste

Pepper powdered (optional)



Methods:


Soak rice for 10 to 20mins and Cook in lots of water with few drop of oil and bit of salt. Till al dente but not mushy. Grains must be separated and set aside let it cool down



Heat the oil in a wide pan add the spices (cardamom, bay leaf, cloves, cinnamon), then add chopped onions and sliced green chili sauté well 




Hand grind the ginger & garlic in semi consistency and add to the above mixture, sauté well till you get the aroma


Add the vegetables and sauté well for another 10 mins. Then close the lid and let it cook for another 5 mins



Heat small pan with ghee and fry the cashew nuts till it becomes golden brown. Then add to the above mixtures.



Now add salt per taste and powdered pepper (optional only if you need it spicier) 



Now switch off the stove or if you pan is big enough switch it to low flame and gently add the rice and mix well



Your healthy tasty Veg fried rice is ready now
